The hand harvested fruit was mostly destemmed, fermented in small fermenters with gentle cap management to extract maximum colour and quality tannins from the skins and seeds. A small quantity (5%) was whole bunch fermented. Spending a total of 21 days on skins to build structure then pressed and transferred immediately to French oak barrels, 20% of which were new, the wine went through malolactic fermentation then matured in barrel for 11 months prior to bottling in February 2019.
